Sakura Jelly.

We bought a packet of sakura no shiozuke which are sakura flowers that are preserved with salt and vinegar in a market in Osaka. It can be used to make tea (just by adding hot water) or as a food garnish (on top of sushi/rice) among others.

Since cherry blossoms are in full bloom right now, I made konnyaku jelly with these sakura flowers in a Mickey Mouse ice mold I found in daiso for 100yen!

I would recommend that you use less of the flowers or wash off the salt before placing into the mold, as it can get quite salty for something that's meant to be sweeter.

It's such a beautiful today- the skies are blue with the tress all bloomed!
